Desaturation
How can you desaturate many layers at the same ?

You can add a Hue & Saturation adjustment layer and turn down the Saturation. You could add a B&W Adjustment layer there are many ways.

I don't want everything below certain layers affected. It helps to talk these things out. What I'm going to do is group the layers in question and put the Adjustment layer inside the group. I got lost trying to use the shortcut.

Perhaps you can just change the order of the layers to put the adjustment layer below the ones you do not want to change.

Here's one solution: Duplicate the group, then merge the copy (ctrl E). Ctrl-click on the thumbnail of the merge copy, then make a new adjustment layer. The area affected will be limited to the selection.

I was called away before I could test my grouping theory to find that it doesn't work. The copy and merge is the way to go. Thanks for the attention.
